CALL FOR SCIENTIFIC PAPERS ON GLUTEN-FREE BEER
RESEARCH & INNOVATION FOR COELIAC DISEASE
All current methods for testing hydrolysed gluten-free foods, such as beer, have limitations and uncertainties. More scientific studies are needed to better understand MS detection of residual gluten in beer and other fermented foods. It is also essential to ensure that the R5 competitive ELISA reliably detects each peptide fragment. Unfortunately, the test currently available is very costly for the industry, making large-scale implementation challenging.
Open questions to the research community
For this reason, AOECS aims to engage with the scientific community to gain insights, reactions, and support on the following questions:
- New analytical methods
New methods for the analysis of hydrolysed products need to be studied. Exploring alternative analytical methods, as well as understanding the limitations of current methods, is very important for the AOECS community. Although LC-MS/MS appears to be more sensitive than the R5 competitive ELISA, it has not yet been validated for accurately quantifying gluten in beer and is therefore not an approved method for gluten detection. Is there any ongoing scientific research that could soon shed light on this topic? What efforts are being made by the scientific community to promote proper validation for all new methods? - Appropriate calibrants
The lack of suitable calibrants that accurately reflect protein/peptide profiles is another critical area of study. It is necessary to differentiate between these profiles to establish appropriate calibration standards and achieve accurate quantification. - Clinical studies
The potential immunogenicity and inflammatory effects of detected gluten fragments can only be assessed through clinical studies. Currently, no validated in vitro models exist to evaluate the effects of residual peptides on individuals with coeliac disease. These effects must be further researched. AOECS believes that clinical approaches should be designed carefully to address potential ethical concerns, ensuring that study participation aligns with the “do no harm” principle. AOECS encourages researchers to consider a clinical study approach based on non-consumption or elimination methods.

Who can participate in this call for research
- Any research group engaged in or interested in basic or applied research related to gluten-free beer and its effects on coeliac patients is welcome, with preference given to those with a recommendation letter from at least one AOECS member National Coeliac Society.
- National Coeliac Society working on gluten free beer related projects
- The research group should have the support from an AOECS member society. A recommendation letter needs to be sent.

- Original research
- Literature review/meta-analysis
- Clinical case report
- Demographic or observational study
- Project from the National Coeliac Society or their contribution in research
Requirements
- The poster must capture the key messages of research or an innovation conducted following a scientific method.
- The poster must be original and not been presented or awarded in a previous scientific event.
- Ideally, research should have been conducted during the last three years and not be older than five years.
- The author(s) will notify any conflict of interest.
- The presenting author is required to ensure that all co-authors are aware of the content of the abstract and agree to its submission, before submitting the abstract.
- Presenting author contact details must be provided during the abstract submission.
- The work must be written in English.
- Abstracts can only be submitted electronically via the AOECS website.
- The poster should be readable when printed in A0 size and high resolution (< 10,000 characters). AOECS will provide the authors with a poster template to be used after the abstract has been approved.
- AOECS has a list of open questions for the scientific community regarding gluten-free beer, and finding answers to these questions is the main aim of this call (see questions in the introduction above). However, if your research group is working on other topics related to gluten-free beer or hydrolysed products, you are also welcome to participate to explore further research avenues.
Application deadline & logistics
Deadline for submission is April 28, 2025. The lead authors will get the notification of outcome in the following week to their submission
- All the communications will be evaluated by an specific evaluators pannel who will give comments about the different projects to the authors.
- All the communications will be displayed in a "Beer book" and some of them will be selected to be presented in a webinar open session in May 2025.
- AOECS will follow up all the proposals with the aim of be updated of the upcoming results or new research lines.
Evaluation committee
AOECS will join forces with specific stakeholders to promote research & innovation on about gluten-free beer.
For that reason, we will create an Evaluation Committee made of different experts (professors, researchers, specialists, and other health professionals) who will read all the submitted publications and make a valuable comment for them all.
The final composition of the members of the Jury will be made public through the website of AOECS once the application deadline is closed.
